- 1 lb boneless chicken breast, cooked and shredded
- 4 cups chicken broth
- 1 tablespoon turmeric powder
- 1 teaspoon ground ginger
- 1 onion, diced
- 3 garlic cloves, minced
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley and lemon wedges for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent.
- Add garlic, carrots, and celery; cook for 5 minutes.
- Stir in turmeric and ground ginger, cook for 1 minute.
- Add chicken broth and shredded chicken; bring to a simmer.
- Cook for 15 minutes, season with salt and pepper.
- Serve hot, garnished with fresh parsley and lemon wedges.
Notes
