Instructions

- In a separate bowl, whisk together vegetable oil, eggs, apple sauce (or chopped apples), vanilla extract, and diced apples until fully incorporated.
- Pour the wet ingredients into the dry ingredients. Gently fold until just combined—avoid overmixing for fluffy muffins.
- Spoon the batter into the muffin tin cups, filling each about 3/4 full. Optionally, sprinkle cinnamon sugar on top.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let muffins cool slightly before removing.
