- ¼ cup brown sugar
- ¼ cup cold unsalted butter, cubed
- ½ teaspoon ground cinnamon
- For frosting:
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- ½ teaspoon vanilla extract
Instructions
- In a small bowl, combine the diced apples, brown sugar, and ground cinnamon. Toss to coat well. Set aside to meld flavors.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, beat the softened butter, eggs, vanilla, and sour cream until smooth. Gradually add dry ingredients to the wet mixture until just combined. Fold in the diced apples evenly.
- Prepare the streusel by mixing flour, brown sugar, cinnamon, and cold butter in a small bowl. Use a pastry cutter or fingers to blend until crumbly.
- Line a cupcake tin with paper liners. Fill each about two-thirds full with batter, add apple filling, then top with remaining batter. Sprinkle with streusel. Bake at 350°F (175°C) for 20-25 minutes or until a toothpick comes out clean.
- Whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Decorate cooled cupcakes with whipped frosting using a piping bag or spatula.
