Ingredients

  • 1 pound dried red beans
  • 1 smoked sausage, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 teaspoons Cajun seasoning
  • 4 cups chicken broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Cooked white rice for serving

Instructions

  1. Rinse and soak red beans overnight or quick-soak them by boiling for 5 minutes and soaking for 1 hour.
  2. In a large pot, sauté sausage, onion, garlic, and bell pepper until fragrant and vegetables are tender.
  3. Add soaked beans, Cajun seasoning, thyme, chicken broth, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer uncovered for about 1.5 hours until beans are tender, adding water if necessary.
  5. Serve hot over cooked white rice garnished with fresh herbs.

Notes

  • You can substitute smoked sausage with ham or turkey sausage.
  • For a vegetarian version, omit sausage and add extra vegetables or smoked paprika.
