Ingredients

Scale
  • 1 lb ground beef or turkey
  • 1 cup finely chopped mixed vegetables (carrots, bell peppers, zucchini)
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 1/2 cup balsamic vinegar (for glaze)
  • 2 tbsp honey or maple syrup (for glaze)

Instructions

  1. Gather all ingredients: chopped vegetables, meat, seasonings, and glaze ingredients.
  2. In a large bowl, combine ground meat, chopped vegetables, breadcrumbs, Parmesan, eggs, garlic, onion, thyme, salt, and pepper. Mix thoroughly.
  3. Shape the mixture into a loaf in a greased pan or on a parchment-lined baking sheet.
  4. Bake at 375°F (190°C) for 45-55 minutes until cooked through and golden brown.
  5. While baking, simmer balsamic vinegar and honey in a small saucepan until it thickens, about 10-15 minutes.
  6. Remove the meatloaf from the oven, drizzle with balsamic glaze, and let rest for 5 minutes before slicing and serving.

Notes

  • Chop vegetables finely for better texture and easier mixing.
  • Allow the meatloaf to rest after baking for clean slices.
