  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 teaspoons vanilla bean paste or vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/4 cup brown butter, cooled

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and melted butter to form the crust. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes.
  2. Cream together cream cheese and sugar until smooth. Mix in vanilla bean paste. Add eggs one at a time, then sour cream. Incorporate brown butter and mix well.
  3. Pour filling over crust and bake for 55-60 minutes until center is almost set. Let cool completely, then refrigerate for at least 4 hours or overnight.
  4. Before serving, drizzle with additional brown butter if desired, and garnish with vanilla beans.
