Instructions
- In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
- In a large mixing bowl, beat softened butter and granulated sugar until fluffy. Add eggs one at a time, then stir in vanilla extract.
- Gently fold in diced apples to incorporate evenly.
- Gradually add the dry mixture to the wet ingredients, mixing just until combined. Do not overmix.
- In a small bowl, combine cinnamon and sugar for coating. Roll about one tablespoon of dough into a ball, then coat in cinnamon sugar. Place on a parchment-lined baking sheet, spaced about 2 inches apart.
- Bake at 375°F (190°C) for 10-12 minutes until edges are golden. Let cool slightly.
- Drizzle warm caramel sauce over cookies. Top with additional apple pieces and caramel bits if desired.
