Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, combine mashed bananas, sugar, oil, eggs, and vanilla; mix well.
- In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add dry ingredients to wet, mixing until just combined.
- Fold in shredded carrots.
- Pour batter into the prepared loaf pan.
- Bake for 55-65 minutes until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.

- You can add nuts or raisins for extra texture.
- Store in an airtight container for up to 3 days or freeze for longer storage.
