- 1.5 pounds ground chicken
- 1 cup breadcrumbs or crushed oats
- 2 large eggs
- 3 cloves garlic, minced
- 1 cup grated parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley (optional)
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a loaf pan or line with parchment paper.
- In a large mixing bowl, combine ground chicken, breadcrumbs, eggs, minced garlic, Parmesan cheese, oregano, salt, and pepper. Mix thoroughly until well combined. Fold in parsley if using.
- Transfer the mixture into the prepared loaf pan, pressing gently to shape evenly. Sprinkle shredded mozzarella cheese evenly over the top.
- Drizzle olive oil over the cheese-topped loaf. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C). Broil for 2-3 minutes for a crispy top if desired.
- Remove from oven and let rest for 10 minutes before slicing to allow juices to redistribute.
Notes
- You can substitute ground turkey or beef for chicken; adjust cooking time accordingly.
- For a low-carb version, replace breadcrumbs with crushed almond meal.
- Using fresh herbs enhances flavor, but dried herbs work well too.
- Serve with roasted vegetables, salad, or mashed potatoes for a complete meal.
