This recipe combines tender ground chicken with aromatic garlic, rich Parmesan, gooey cheese, and fresh herbs, baked to perfection for a satisfying and nutritious meal.

  • Total Time: 1 hour 5 minutes
  • Yield: 4-6 servings 1x

Ingredients

Scale
  • 1.5 pounds ground chicken
  • 1 cup breadcrumbs or crushed oats
  • 2 large eggs
  • 3 cloves garlic, minced
  • 1 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley (optional)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a loaf pan or line with parchment paper.
  2. In a large mixing bowl, combine ground chicken, breadcrumbs, eggs, minced garlic, Parmesan cheese, oregano, salt, and pepper. Mix thoroughly until well combined. Fold in parsley if using.
  3. Transfer the mixture into the prepared loaf pan, pressing gently to shape evenly. Sprinkle shredded mozzarella cheese evenly over the top.
  4. Drizzle olive oil over the cheese-topped loaf. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C). Broil for 2-3 minutes for a crispy top if desired.
  5. Remove from oven and let rest for 10 minutes before slicing to allow juices to redistribute.

Notes

  • You can substitute ground turkey or beef for chicken; adjust cooking time accordingly.
  • For a low-carb version, replace breadcrumbs with crushed almond meal.
  • Using fresh herbs enhances flavor, but dried herbs work well too.
  • Serve with roasted vegetables, salad, or mashed potatoes for a complete meal.
