Ingredients

  • 1 lb ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) diced tomatoes (optional for a chili twist)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 bag (32 oz) frozen Tater Tots
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, jalapeños, or crispy bacon

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onions and cook until translucent. Stir in minced garlic and cook for another minute. Add ground beef or turkey, with salt and pepper, and cook until browned. Drain excess fat. Optional: stir in diced tomatoes. Set aside.
  2. In the same skillet, stir in sour cream and half of the shredded cheese. Mix until creamy and well combined.
  3. Preheat oven to 375°F (190°C). Spread the meat mixture evenly in a casserole dish. Arrange the frozen Tater Tots on top in a single layer. Sprinkle remaining cheese over the Tater Tots.
  4. Bake uncovered for 30-40 minutes until Tater Tots are golden and crispy. Let sit for 5 minutes before serving. Garnish with optional toppings if desired.
