 - Egg wash (1 egg beaten with a little water) for brushing
 
Instructions
- In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic and cook until fragrant and translucent.
 - Add chopped bell peppers, grated carrots, and greens; sauté until slightly tender. Season with salt and pepper, then remove from heat and let cool slightly.
 - Mix the cooled vegetable mixture with grated cheese to prepare the filling.
 - Preheat oven to 375°F (190°C). Roll out puff pastry or prepare spring roll wrappers.
 - Place a spoonful of the filling onto each wrapper and roll tightly, sealing edges with egg wash.
 - Brush the tops with egg wash for extra crispiness before baking.
 - Arrange the rolls on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown and crispy.
 - Remove from oven and let cool slightly before serving.
