Ingredients
Scale
- 1 sheet of puff pastry or spring roll wrappers
- 1 cup of grated cheese (cheddar, mozzarella, or your preferred cheese)
- ½ cup of finely chopped bell peppers
- ½ cup of grated carrots
- ½ cup of chopped spinach or kale
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Egg wash (1 egg beaten with a little water) for brushing
Instructions
- In a skillet, heat olive oil over medium heat. Add diced onion and minced garlic and cook until fragrant and translucent.
- Add chopped bell peppers, grated carrots, and greens; sauté until slightly tender. Season with salt and pepper, then remove from heat and let cool slightly.
- Mix the cooled vegetable mixture with grated cheese to prepare the filling.
- Preheat oven to 375°F (190°C). Roll out puff pastry or prepare spring roll wrappers.
- Place a spoonful of the filling onto each wrapper and roll tightly, sealing edges with egg wash.
- Brush the tops with egg wash for extra crispiness before baking.
- Arrange the rolls on a baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown and crispy.
- Remove from oven and let cool slightly before serving.
Notes
- Use fresh, crisp vegetables for the best texture.
- Ensure the filling is not too wet to prevent sogginess.
- Seal the edges well to prevent filling from leaking during baking.
- Customize with different cheeses or herbs for added flavor.
