- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar

Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together flour, cream of tartar, baking soda, salt, and cinnamon.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- In a small bowl, mix additional granulated sugar and cinnamon for coating.
- Roll dough into 1 1/2-inch balls, then roll each ball in cinnamon sugar until coated.
- Place on prepared baking sheets, spacing about 2 inches apart.
- Bake for 10-12 minutes until edges are golden but centers are soft.
- Allow cookies to cool on wire racks before serving.

- Keep dough chilled if not baking immediately for easier handling.
- Cookies will be soft and chewy, so avoid overbaking.
