- 1.5 pounds of high-quality beef chuck or sirloin, cut into bite-sized chunks
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 cup beef broth
- 1/2 cup red wine (optional)
- 2 tablespoons Worcestershire sauce
- 2 teaspoons dried thyme
- Salt and freshly ground black pepper to taste
- Olive oil for sautéing
- Fresh parsley for garnish
Instructions
- Heat a large, heavy-bottomed skillet or Dutch oven over medium-high heat. Add a splash of olive oil and sear the beef chunks until browned on all sides. Remove and set aside.
- In the same skillet, sauté chopped onions until translucent. Add minced garlic and cook for another minute.
- Stir in tomato paste and cook for a minute. Pour in beef broth and red wine, scraping up browned bits. Add Worcestershire sauce, thyme, salt, and pepper. Simmer to meld flavors.
- Return beef to the skillet. Cover and reduce heat to low. Simmer for 1.5 to 2 hours until beef is tender and sauce thickens.
- Garnish with chopped fresh parsley before serving.
