			- 1 lb ground beef or turkey
 - 1 small onion, diced
 - 1 can sweet corn, drained
 - 1 box cornbread mix (check your favorite brand)
 - 1/4 cup milk
 - 2 eggs
 - 1 cup shredded cheddar cheese
 - 1 tbsp olive oil
 - Optional toppings: sliced jalapeños, chopped cilantro, sour cream
 
Instructions
- Heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
 - Add ground beef or turkey and cook until browned, breaking it apart. Season with salt and pepper. Drain excess fat if necessary.
 - In a bowl, combine drained corn and half of the shredded cheddar cheese. Mix well.
 - Prepare the cornbread batter by whisking together the cornbread mix, eggs, milk, and a pinch of salt until smooth.
 - Preheat oven to 375°F (190°C). Spread meat and onion mixture evenly in a greased baking dish.
 - Layer the corn and cheese mixture over the meat. Pour cornbread batter on top, spreading gently to cover everything evenly.
 - Sprinkle remaining cheese over the top and bake for 25-30 minutes until golden brown. Let rest for 5 minutes before serving.
 
Notes
- You can substitute ground turkey or chicken for beef.
 - Feel free to add extra toppings like jalapeños or sour cream for more flavor.
 - Leftovers can be stored in an airtight container for up to 3 days.
 - To reheat, microwave in 30-second intervals or warm in the oven at 350°F until heated through.
