  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 1 can sweet corn, drained
  • 1 box cornbread mix (check your favorite brand)
  • 1/4 cup milk
  • 2 eggs
  • 1 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • Optional toppings: sliced jalapeños, chopped cilantro, sour cream

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
  2. Add ground beef or turkey and cook until browned, breaking it apart. Season with salt and pepper. Drain excess fat if necessary.
  3. In a bowl, combine drained corn and half of the shredded cheddar cheese. Mix well.
  4. Prepare the cornbread batter by whisking together the cornbread mix, eggs, milk, and a pinch of salt until smooth.
  5. Preheat oven to 375°F (190°C). Spread meat and onion mixture evenly in a greased baking dish.
  6. Layer the corn and cheese mixture over the meat. Pour cornbread batter on top, spreading gently to cover everything evenly.
  7. Sprinkle remaining cheese over the top and bake for 25-30 minutes until golden brown. Let rest for 5 minutes before serving.

Notes

  • You can substitute ground turkey or chicken for beef.
  • Feel free to add extra toppings like jalapeños or sour cream for more flavor.
  • Leftovers can be stored in an airtight container for up to 3 days.
  • To reheat, microwave in 30-second intervals or warm in the oven at 350°F until heated through.
