- 1 cup wild rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 1 cup chopped mushrooms
- 1 cup cream or coconut milk
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Cook wild rice according to package instructions and set aside.
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; cook until tender.
- Add garlic and cook for another minute.
- Pour in vegetable broth and bring to a boil.
- Add cooked wild rice and mushrooms; simmer for 20 minutes.
- Stir in cream, season with salt and pepper, then heat through.
- Serve hot, garnished with fresh herbs.
Notes
For added flavor, sauté vegetables longer for caramelization. Use coconut milk for dairy-free option. Serve with crusty bread.
