  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup cooked breakfast sausage or bacon
  • 1/2 cup chopped green onions
  • 1/2 cup salsa
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Whisk eggs, cumin, salt, and pepper in a bowl.
  3. Cook sausage or bacon in a skillet until browned, then set aside.
  4. Scramble eggs in the same skillet until just cooked.
  5. Warm tortillas slightly to make rolling easier.
  6. Divide scrambled eggs, sausage, cheese, and green onions among tortillas.
  7. Roll up tortillas and place seam-side down in a baking dish.
  8. Top with salsa and remaining cheese.
