- 8 large flour tortillas
- 6 large eggs
- 1 cup shredded cheddar cheese
- 1 cup cooked breakfast sausage or bacon
- 1/2 cup chopped green onions
- 1/2 cup salsa
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Whisk eggs, cumin, salt, and pepper in a bowl.
- Cook sausage or bacon in a skillet until browned, then set aside.
- Scramble eggs in the same skillet until just cooked.
- Warm tortillas slightly to make rolling easier.
- Divide scrambled eggs, sausage, cheese, and green onions among tortillas.
- Roll up tortillas and place seam-side down in a baking dish.
- Top with salsa and remaining cheese.
- Bake for 20-25 minutes until cheese is bubbly and golden.
Notes
- You can prepare the enchiladas ahead of time and bake when ready.
- Use vegetarian sausage to make it meatless.
- For extra flavor, add diced peppers or hot sauce.
