  • Total Time: 2 hours 30 minutes
  • Yield: 12 large cinnamon rolls 1x

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 packet (2 ¼ teaspoons) active dry yeast
  • ½ cup warm milk
  • ¼ cup granulated sugar
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup unsalted butter, browned
  • 1 cup pure pumpkin puree
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • For the filling:
  • ½ cup softened butter
  • ¾ cup brown sugar
  • 2 teaspoons ground cinnamon
  • Optional: chopped pecans or walnuts
  • To glaze: Cream cheese frosting or vanilla glaze

Instructions

  1. Combine warm milk and active dry yeast in a small bowl. Let sit until foamy, about 5 minutes.
  2. Meanwhile, brown the butter in a saucepan over medium heat until golden and nutty. Set aside to cool slightly.
  3. In a large bowl, whisk together flour, sugar, salt, cinnamon, nutmeg, and cloves.
  4. Add eggs, cooled browned butter, pumpkin puree, and yeast mixture. Mix until a sticky dough forms.
  5. Knead on a floured surface for 5-7 minutes until smooth and elastic. Cover and let rise in a warm place for 1 to 1.5 hours until doubled.
  6. Mix softened butter, brown sugar, and cinnamon to make the filling; set aside.
  7. Once risen, punch down the dough and roll into a 16×12 inch rectangle on a floured surface.
  8. Spread the filling evenly over the dough, adding chopped nuts if desired.
  9. Roll the dough tightly from one long edge to the other. Cut into 12 slices and place in a greased baking dish.
  10. Preheat oven to 350°F (175°C). Let the rolls rise for 20-30 minutes, then bake for 25-30 minutes until golden.
  11. Prepare glaze or frosting and drizzle over warm cinnamon rolls before serving.

Notes

  • Use fresh pumpkin puree for optimal flavor.
  • Ensure butter is properly browned for a rich, nutty flavor.
  • Allow sufficient rising time for fluffier, tender rolls.
  • Customize with nuts, raisins, or caramel for added variety.
