- ¾ cup brown sugar
- 2 teaspoons ground cinnamon
- Optional: chopped pecans or walnuts
- To glaze: Cream cheese frosting or vanilla glaze
Instructions
- Combine warm milk and active dry yeast in a small bowl. Let sit until foamy, about 5 minutes.
- Meanwhile, brown the butter in a saucepan over medium heat until golden and nutty. Set aside to cool slightly.
- In a large bowl, whisk together flour, sugar, salt, cinnamon, nutmeg, and cloves.
- Add eggs, cooled browned butter, pumpkin puree, and yeast mixture. Mix until a sticky dough forms.
- Knead on a floured surface for 5-7 minutes until smooth and elastic. Cover and let rise in a warm place for 1 to 1.5 hours until doubled.
- Mix softened butter, brown sugar, and cinnamon to make the filling; set aside.
- Once risen, punch down the dough and roll into a 16×12 inch rectangle on a floured surface.
- Spread the filling evenly over the dough, adding chopped nuts if desired.
- Roll the dough tightly from one long edge to the other. Cut into 12 slices and place in a greased baking dish.
- Preheat oven to 350°F (175°C). Let the rolls rise for 20-30 minutes, then bake for 25-30 minutes until golden.
- Prepare glaze or frosting and drizzle over warm cinnamon rolls before serving.
