Ingredients
Scale
- 3 ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
- 1/4 cup brown sugar (for cinnamon swirl)
- Optional: chopped nuts or chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan with butter or line with parchment paper.
- In a large bowl, mash the bananas until smooth. Mix in melted butter, sugar, eggs, and vanilla, whisking until well combined.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add to wet ingredients, stirring gently just until combined.
- Mix brown sugar with an extra teaspoon of cinnamon in a small bowl and set aside for the cinnamon swirl.
- Pour half of batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture over it. Repeat with remaining batter and cinnamon-sugar. Use a skewer to swirl the batter, creating a cinnamon ribbon.
- Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean. Cool for 10-15 minutes before removing from the pan.
Notes
- For added flavor, fold in chopped nuts or chocolate chips into the batter.
- Ensure not to overmix the batter to keep the bread moist and tender.
- Store at room temperature in an airtight container for up to 2 days, or refrigerate for up to a week.
- Freeze slices for longer storage; thaw at room temperature or warm in microwave before serving.
