- 1 lb Italian sausage, sliced
- 1 small onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 package (9 oz) tortellini
- 1 cup heavy cream
- 1 cup spinach, chopped
- Salt and pepper to taste
Instructions
- In a large pot, cook sausage over medium heat until browned. Remove and set aside.
- In the same pot, sauté onion and garlic until fragrant and translucent.
- Pour in chicken broth and bring to a simmer.
- Add tortellini and cook according to package instructions.
- Stir in heavy cream and cooked sausage; simmer for a few minutes.
- Add spinach, season with salt and pepper, and cook until wilted.
- Serve hot topped with fresh herbs if desired.

- Adjust the cream for a richer or lighter broth.
