- 4 large yellow onions, thinly sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 4 cups beef or vegetable broth
- 1 teaspoon sugar
- 1 teaspoon thyme
- Salt and pepper to taste
- Baguette slices
- 2 cups shredded Gruyere cheese
Instructions
- In a large pot, melt butter with olive oil over medium heat.
- Add onions and sugar; cook until caramelized, about 30 minutes, stirring occasionally.
- Stir in thyme, salt, and pepper.
- Pour in broth and simmer for 20 minutes.
- Preheat oven broiler. Ladle soup into ovenproof bowls, top with baguette slices and cheese.
- Broil until cheese is bubbly and golden, about 3-5 minutes. Serve hot.
