- 4 large russet potatoes
- 2 cups cooked shredded chicken
- 1/2 cup ranch dressing
- 1/2 cup shredded cheddar cheese
- 4 slices bacon cooked and crumbled
- 2 green onions chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Pierce potatoes and bake for 45-55 minutes until tender.
- In a bowl, mix shredded chicken, ranch dressing, salt, and pepper.
- Cut potatoes in half and carefully scoop out most of the insides into a bowl.
- Mix potato insides with chicken mixture, then spoon back into potato skins.
- Top with shredded cheese and crumbled bacon.
- Bake covered for an additional 10 minutes until cheese melts.
- Garnish with chopped green onions before serving.
Notes
- You can substitute cooked turkey or beef for chicken.
- For extra flavor, add garlic powder or hot sauce to the chicken mixture.
