- 4 pounds Russet potatoes
- 1/2 cup unsalted butter
- 1 cup whole milk
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Salt and freshly ground pepper to taste
- Fresh chives or parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Peel and cut potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.
- Drain potatoes and mash until smooth.
- In a saucepan, heat butter and milk until warm. Mix into mashed potatoes along with sour cream and cheese. Season with salt and pepper.
- Transfer the mashed potatoes to a baking dish. Bake uncovered for 25-30 minutes until golden on top.
- Garnish with chopped herbs before serving.

- You can add cooked bacon or caramelized onions for extra flavor.
- Use full-fat dairy for the creamiest texture.
