- 1 large head cauliflower, chopped into florets
- 2 cups cooked chicken, shredded
- 1/2 cup buffalo hot sauce
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Toss cauliflower florets with olive oil, salt, and pepper. Roast for 20 minutes until tender and slightly browned.
- In a mixing bowl, combine shredded chicken, buffalo sauce, sour cream, and chopped green onions.
- Spread roasted cauliflower in the prepared dish. Top with buffalo chicken mixture and sprinkle with shredded cheese.
- Bake in the oven for 15-20 minutes until cheese is melted and bubbly. Garnish with additional green onions and serve hot.
Notes
- For extra creaminess, add a dollop of sour cream before baking.
- Use mild or hot buffalo sauce based on your spice preference.
