- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cans (15 oz) white beans, drained and rinsed
- 4 cups vegetable broth
- 1 teaspoon thyme
- Salt and black pepper to taste
- 6 slices bacon, cooked crispy and crumbled
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent, about 5 minutes.
- Stir in garlic and cook for another minute.
- Add white beans, vegetable broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Use an immersion blender or transfer to a blender to puree until smooth.
- Top with crispy bacon crumbles before serving.
Notes
- For a vegan version, omit bacon or use vegan bacon replacements.
- Adjust seasoning as needed for preferred flavor intensity.
