- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup popcorn kernel
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
- Puff popcorn in a food processor until roughly chopped, set aside.
- In a bowl, combine popcorn, breadcrumbs, paprika, garlic powder, salt, and pepper.
- Place flour in a shallow dish. Beat eggs in another dish.
- Dip chicken pieces in flour, then in beaten eggs, and finally coat with popcorn mixture.
- Arrange coated chicken on prepared baking sheet and spray lightly with cooking spray.
- Bake for 20-25 minutes, flipping halfway, until golden and crispy.
Notes
- You can substitute panko breadcrumbs for extra crunch.
- Serve with your favorite dipping sauces like honey mustard or ranch.
