  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup popcorn kernel
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
  2. Puff popcorn in a food processor until roughly chopped, set aside.
  3. In a bowl, combine popcorn, breadcrumbs, paprika, garlic powder, salt, and pepper.
  4. Place flour in a shallow dish. Beat eggs in another dish.
  5. Dip chicken pieces in flour, then in beaten eggs, and finally coat with popcorn mixture.

  7. Bake for 20-25 minutes, flipping halfway, until golden and crispy.
