Instructions
- Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess moisture.
- In a bowl, combine zucchini, flour, Parmesan, garlic, egg, and black pepper.
- Heat a skillet with olive oil over medium heat.
- Drop spoonfuls of batter into the skillet and flatten slightly. Cook until golden brown on both sides, about 3-4 minutes per side.
- Transfer to a paper-lined plate and serve warm with yogurt or dipping sauce.

- For extra crunch, add a handful of panko bread crumbs to the batter.
