- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, cold
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder

Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, combine flour, baking powder, salt, and cinnamon.
- Cut cold butter into small pieces and mix into the flour until crumbly.
- In another bowl, whisk egg and vanilla, then add to the flour mixture, mixing just until combined.
- Drop spoonfuls of dough onto prepared baking sheets, spacing evenly.
- In a small bowl, mix remaining sugar and cinnamon for the topping. Sprinkle generously over each cookie.
- Bake for 12-15 minutes until golden brown. Cool on wire racks.
