Ingredients
Scale
- 200g of high-quality dark chocolate (70% cacao or higher)
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 1/2 cup all-purpose flour
- Optional: fresh berries or a raspberry coulis for garnish
Instructions
- Prepare the crust by crushing digestive biscuits or graham crackers until fine, then mix with 1/4 cup melted butter. Press evenly into a 9-inch springform pan and chill.
- Melt the dark chocolate using a double boiler or microwave, then let it cool slightly.
- In a large bowl, beat the softened cream cheese until smooth. Gradually add sugar, then incorporate eggs one at a time. Mix in vanilla extract and sour cream. Fold in melted chocolate and flour until fully combined.
- Pour the filling over the chilled crust. Bake at 325°F (160°C) for 55-60 minutes until the center is just set. Cool completely in the pan, then refrigerate for at least 4 hours or overnight.
Notes
- For even richer flavor, use high-quality dark chocolate with at least 70% cacao.
- Chill the cheesecake thoroughly before slicing for clean cuts.
- Optional garnishes include fresh berries, sauces, whipped cream, or edible gold flakes.
