  • 2 cups fresh blackberries
  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • For frosting: 1 cup heavy cream, 2 tablespoons powdered sugar, dark edible food coloring

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. In a bowl, mix flour, baking powder, and salt. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla. Alternately add dry ingredients and milk, beginning and ending with dry ingredients.
  3. Divide batter evenly into pans and bake for 25-30 minutes. Let cool completely.
  4. Whip heavy cream with powdered sugar and a few drops of dark food coloring until stiff peaks form.
  5. Spread frosting between layers and on top. Decorate with fresh blackberries and edible accents. Serve chilled.
