- 2 cups fresh blackberries
- 2 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- For frosting: 1 cup heavy cream, 2 tablespoons powdered sugar, dark edible food coloring
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a bowl, mix flour, baking powder, and salt. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla. Alternately add dry ingredients and milk, beginning and ending with dry ingredients.
- Divide batter evenly into pans and bake for 25-30 minutes. Let cool completely.
- Whip heavy cream with powdered sugar and a few drops of dark food coloring until stiff peaks form.
- Spread frosting between layers and on top. Decorate with fresh blackberries and edible accents. Serve chilled.

- Use ripe blackberries for best flavor.
- Chill the cake for an hour before serving for best texture.
