Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, and thyme.
- In a skillet, heat olive oil over medium heat and sear chicken until golden brown, about 3-4 minutes per side.
- Transfer chicken to a baking dish, top each with slices of Brie cheese and cranberries.
- Bake uncovered for 20-25 minutes until the cheese melts and cranberries burst.
Notes
- Use fresh cranberries for optimal flavor; frozen can be substituted.
- Serve with a side of roasted vegetables or mashed potatoes for a complete meal.
