- 1 sheet puff pastry, thawed
- 4 slices ham
- 2 eggs
- 1/2 cup grated Gruyère or Swiss cheese
- 1 tablespoon Dijon mustard (optional)
- Fresh herbs for garnish
Instructions
- Preheat oven to 400°F (200°C). Roll out puff pastry on a lightly floured surface. Cut into four squares and place on a parchment-lined baking sheet.
- Spread a thin layer of Dijon mustard on each pastry square (optional). Top each with a slice of ham and grated cheese.
- Bake in the oven for 15-20 minutes until golden and puffed.
- While the pastry bakes, fry eggs sunny-side up in a skillet with a little butter or oil.
- Remove baked pastry from oven. Top each with a fried egg and garnish with fresh herbs. Serve immediately.

- For extra flavor, add a touch of pepper or herbs before baking.
- Use pre-made puff pastry for convenience or homemade if desired.
