Ingredients

  • 1/2 cup butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup pureed strawberries
  • 2 tbsp sugar
  • Powdered sugar for dusting
  • Fresh strawberries for topping

Instructions

  1. Preheat oven to 400°F (200°C). Bring water and butter to boil in a saucepan.
  2. Add flour all at once, stirring vigorously until mixture forms a ball.
  3. Remove from heat and let cool slightly.
  4. Beat in eggs individually until smooth and glossy.
  5. Spoon or pipe batter onto baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes until golden and puffed.
  7. Meanwhile, whip heavy cream with sugar to soft peaks.
  8. Gently fold in strawberry puree into the whipped cream.
  9. Once cooled, cut puffs in half and fill with strawberry cream.
  10. Top with fresh strawberries and dust with powdered sugar before serving.
