Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream together butter and sugar until fluffy. Beat in eggs and vanilla.
- Mix in flour, baking powder, and salt until just combined.
- In a small bowl, combine brown sugar, cinnamon, and nuts for streusel topping.
- Scoop spoonfuls of dough onto prepared baking sheets.
- Sprinkle streusel over each cookie.
- Bake for 12-15 minutes or until golden brown. Cool before serving.

- For extra flavor, add a splash of coffee extract.
