- 1 cup homemade applesauce
- ½ cup honey or maple syrup
- 2 large eggs
- ¼ cup melted butter or coconut oil
- 1 teaspoon vanilla extract

Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners or lightly grease it.
- Whisk together the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, mix the wet ingredients: applesauce, honey or maple syrup, eggs, melted butter, and vanilla extract until smooth.
- Gently fold the wet mixture into the dry ingredients until just combined. Optionally, fold in chopped nuts or raisins.
- Spoon the batter into the muffin tin, filling each about ¾ full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.
Notes
- Use unsweetened store-bought applesauce for a healthier option.
- Feel free to add your favorite mix-ins like walnuts or dried cranberries.
- If you prefer muffins sweeter, add a little more honey or maple syrup.
