Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup fresh blueberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan and set aside.
- In a mixing bowl, beat together softened butter and sugar until creamy. Add eggs one at a time, then vanilla.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet mixture alternately with milk, mixing just until combined.
- In a small bowl, blend cream cheese and powdered sugar until smooth.
- Pour half of the batter into the prepared loaf pan. Dollop half of the cream cheese mixture and sprinkle half of the blueberries on top. Repeat with remaining batter, cream cheese, and blueberries.
- Swirl gently with a knife to create a marbled effect. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before slicing. Serve warm or at room temperature.
Notes
- For deeper blueberry flavor, fold in fresh blueberries into the batter before baking.
- Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for longer freshness.
