- 3 ripe bananas, mashed

- 1 teaspoon baking soda

- 2 large eggs
- ½ cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- ½ cup crushed walnuts or pecans (optional)
Instructions
- In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
- In another bowl, mash the bananas thoroughly. Add eggs, oil, and vanilla extract. Mix until well combined. Stir in grated carrots and nuts if using.
- Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Pour batter into a greased loaf pan. Bake at 350°F (175°C) for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For added flavor, sprinkle with a little extra cinnamon before baking.
- Optional: Fold in chocolate chips or dried fruits for variations.
- Use freshly grated carrots for the best texture and flavor.
