Instructions
- Heat a large skillet over medium heat and sauté onions and peppers until tender.
- Add shredded chicken, enchilada sauce, cumin, chili powder, salt, and pepper. Stir to combine and cook for 5 minutes.
- Sprinkle shredded cheese evenly over the mixture and cover until cheese melts, about 3-4 minutes.
- Garnish with chopped cilantro and sliced jalapenos before serving.
