Ingredients
Scale
- 1.5 pounds boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 cup all-purpose flour or almond flour for gluten-free option
- 2 large eggs, beaten
- 1 cup panko breadcrumbs or crushed crackers for extra crunch
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and freshly ground black pepper to taste
- 2 tablespoons olive oil or melted butter
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Prepare three shallow bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with herbs and spices.
- Dip each chicken piece into the flour, then into the eggs, and finally coat with the breadcrumb mixture. Arrange on the prepared baking sheet.
- Drizzle with olive oil or brush with melted butter for extra crispness.
- Bake for 20-25 minutes, turning halfway through, until golden brown and internal temperature reaches 165°F. For crispier bites, broil for an additional 2-3 minutes.
Notes
- Use chicken thighs for extra juiciness; chicken breasts for a leaner option.
- For gluten-free, substitute with almond or coconut flour and gluten-free panko.
- Serve with your favorite dipping sauces or side salads for a complete meal.
