Ingredients

  • 4 salmon fillets
  • 2 cups fresh spinach, chopped
  • 1 cup crumbled feta cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil and sauté garlic until fragrant. Add spinach and cook until wilted. Remove from heat and mix in feta cheese.
  3. Cut a slit into the side of each salmon fillet to create a pocket. Stuff each pocket with the spinach and feta mixture.
  4. Place salmon on a baking sheet lined with parchment paper. Season with salt and pepper.
  5. Bake for 20-25 minutes until the salmon is cooked through and flaky.
  6. Serve with lemon wedges and fresh herbs for garnish.
