- 4 salmon fillets
- 2 cups fresh spinach, chopped
- 1 cup crumbled feta cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Lemon wedges, for serving
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil and sauté garlic until fragrant. Add spinach and cook until wilted. Remove from heat and mix in feta cheese.
- Cut a slit into the side of each salmon fillet to create a pocket. Stuff each pocket with the spinach and feta mixture.
- Place salmon on a baking sheet lined with parchment paper. Season with salt and pepper.
- Bake for 20-25 minutes until the salmon is cooked through and flaky.
- Serve with lemon wedges and fresh herbs for garnish.
