- 2 cups cooked shredded chicken
- 1/2 cup BBQ sauce
- 2 large large flour tortillas
- 1 cup shredded cheddar cheese
- 1/4 cup chopped red bell peppers
- 1/4 cup chopped green onions
- Olive oil spray
- Fresh cilantro for garnish
Instructions
- In a bowl, combine shredded chicken with BBQ sauce until well coated.
- Heat a skillet over medium heat and spray lightly with olive oil.
- Place one tortilla on the skillet, sprinkle with cheese, then evenly spread BBQ chicken, peppers, and green onions.
- Top with the second tortilla and press down lightly.
- Cook until the bottom is golden brown, about 3-4 minutes, then flip and cook the other side until crispy and cheese is melted.
- Remove from skillet, slice into wedges, and garnish with cilantro. Serve warm with sides of salsa or sour cream.
Notes
- Feel free to add sliced jalapenos for extra heat.
- Use a non-stick skillet for easier flipping and cleanup.
