Instructions
- Heat oil in a skillet and brown beef cubes for 5 minutes. Transfer to crock pot.
- Add diced potatoes, sliced carrots, chopped onion, minced garlic, salt, pepper, and thyme to the crock pot.
- Pour in beef broth, ensuring ingredients are covered.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until meat and vegetables are tender.
