- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups mixed vegetables (peppers, corn, peas)
- 1 can cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1 cup cooked rice or mashed potatoes
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef, onion, and garlic until browned.
- Add vegetables, salt, pepper, and cook for 5 minutes.
- Mix in cream of mushroom soup and cooked rice or potatoes.
- Transfer to a baking dish, top with shredded cheese.
- Bake for 20-25 minutes until cheese is bubbly and golden.
