Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef chunks and cook until browned on all sides.
- Add chopped onion and minced garlic, sauté until fragrant.
- Stir in carrots, potatoes, and celery.
- Pour in beef broth and add thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender and flavors meld.

- You can add peas or green beans in the last 15 minutes for extra nutrition and color.
