- 1 pound Italian sausage, sliced
- 1 package (9 oz) tortellini
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup spinach, chopped
- 1 teaspoon Italian herbs
- Salt and pepper to taste
Instructions
- In a large pot, cook sausage slices until browned.
- Add chopped onion and garlic, sauté until translucent.
- Pour in chicken broth and diced tomatoes, bring to a boil.
- Reduce heat, add tortellini and Italian herbs, simmer until tortellini are cooked.
- Stir in spinach until wilted, season with salt and pepper.
- Serve hot, garnished with Parmesan or fresh herbs if desired.
Notes
- This soup is best enjoyed fresh but can be stored in the fridge for a day.
