- 1 lb (450 g) ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 package (9 oz) cheese tortellini
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 cups fresh spinach
- 1/4 cup chopped fresh basil or parsley
- Grated Parmesan cheese for garnish
Instructions
- In a mixing bowl, combine ground beef, breadcrumbs, Parmesan, egg, Italian seasoning, salt, and pepper. Form into 1-inch meatballs.
- In a large pot, bring chicken broth to a simmer. Add meatballs and cook until they are cooked through, about 10 minutes.
- Add diced tomatoes with their juice and tortellini to the pot. Cook for about 5-7 minutes until tortellini is tender.
- Stir in fresh spinach and cook until wilted, about 2 minutes.
- Garnish with chopped basil or parsley and additional Parmesan cheese before serving.
Notes
- You can substitute beef with turkey or chicken for a lighter option.
- Frozen tortellini can be used for even faster preparation.
- Adjust seasoning and herbs as desired for a personalized flavor.
