  • Total Time: 1 hour 30 minutes
  • Yield: 24 cookies 1x

Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup canned pumpkin puree (not pie filling)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
  2. Using a stand mixer or hand mixer, beat the softened butter and sugar until light and fluffy.
  3. Mix in the pumpkin, egg, and vanilla until well combined.
  4. Gradually add the dry ingredients into the wet mixture, mixing just until combined. Do not overmix.
  5. Wrap the dough in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Using a cookie scoop, portion the dough onto baking sheets, spacing about 2 inches apart. Bake for 10-12 minutes, until edges are lightly golden.
  8. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack.
  9. In a mixing bowl, beat the cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until fluffy.
  10. Spread or pipe the frosting on cooled cookies. Decorate if desired.

Notes

  • Chill the dough thoroughly to prevent spreading during baking.
  • For a festive presentation, decorate with fall-themed sprinkles or edible decorations.
  • Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • Freeze un-frosted cookies wrapped in plastic for up to a month.
