- 4 large bell peppers (any color)
- 1 pound ground beef
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: chopped parsley or cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds and membranes.
- In a skillet, heat olive oil over medium heat and sauté onions and garlic until fragrant.
- Add ground beef, cook until browned, then season with salt and pepper.
- Mix cooked rice into the beef mixture, then stuff the peppers with the mixture.
- Place stuffed peppers in a baking dish, top with shredded cheese.
- Bake in the preheated oven for 25-30 minutes until peppers are tender and cheese is melted.
- Garnish with chopped parsley or cilantro before serving.

- Feel free to add diced tomatoes or herbs for variation.
- Use any cheese of your choice for topping.
