- 2 pounds boneless, skinless chicken breasts
- 1/4 cup fresh lime juice
- 1/4 cup chopped fresh cilantro
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1/2 cup chicken broth
Instructions
- Place chicken breasts in the crock pot.
- Mix lime juice, garlic, cumin, chili powder, salt, pepper, and chicken broth in a bowl.
- Pour mixture over chicken.
- Cook on low for 6 hours or high for 3 hours.
- Shred the chicken using two forks and mix with juices.
- Garnish with chopped cilantro and lime wedges before serving.
Notes
- You can substitute chicken thighs for breasts for more flavor.
- Serve over rice, in tacos, or salads.
