Instructions
- In a bowl, whisk eggs, mayonnaise, soy sauce, salt, and pepper until well combined.
- Pour mixture into a non-stick skillet over medium-low heat, gently scramble until just cooked but still creamy.
- Remove from heat and let cool slightly.
- Spread the egg mixture evenly over two slices of bread.
- Top with remaining bread slices and gently press to compact.
- Slice diagonally and garnish with chopped green onion or chives.
